This traceability highlights distinct flavor profiles that reflect a particular place and harvest, which preserves the integrity of the flavor from that farm, as oppose to a standardized blend. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e-NATURALLY PROCESSED:\u003c\/strong\u003e Naturally processed coffee, also known as dry-processed coffee, is made by drying the whole coffee cherry in the sun before removing the fruit, allowing the bean to absorb more of the cherry’s natural sugars and flavors. This type of processing is more time-intensive, but allows the coffee to ferment, enabling the fruity flavor and enhanced sweetness that are highly prized in specialty coffee. Because it requires meticulous sorting and longer drying times, naturally processed coffee is often positioned as a premium offering with a distinctive, complex character compared to washed or mechanically processed coffees.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e-ROAST:\u003c\/strong\u003e A light-medium roast is often considered ideal for specialty coffee because it best preserves and highlights the bean’s intrinsic quality and origin characteristics. At this roast level, the natural sweetness, acidity, and layered flavor notes (chocolate \u0026amp; caramel for ours) remain distinct, rather than being overshadowed by heavier, dark-roast flavors like smoke or char.\u003c\/p\u003e\n\u003cp data-start=\"420\" data-end=\"727\" data-is-last-node=\"\" data-is-only-node=\"\"\u003eSince specialty coffee is graded for clarity, balance, and complexity, a light-medium roast allows these attributes to shine through, showcasing the craftsmanship at farm and processing level rather than masking it with roast intensity. This is why lower grades of coffee are typically dark roasted, as the poorer quality of the coffee is being masked by the roasting process.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e-SPECIALTY COFFEE: \u003c\/strong\u003eThe culmination of all the above factors along with exceptional climate conditions gives us a product that is the highest grade of coffee, specialty coffee, which is defined as scoring an 80 or above by a certified individual on a scale of 0 to 100, as defined by the \u003cspan class=\"hover:entity-accent entity-underline inline cursor-pointer align-baseline\"\u003e\u003cspan class=\"whitespace-normal\"\u003eSpecialty Coffee Association\u003c\/span\u003e\u003c\/span\u003e. It represents exceptional quality at every stage, from carefully grown and harvested beans in a location that offers great climate conditions, to the processing, roasting and finally brewing, which will obviously be done by you, the consumer, since we are selling packaged coffee.\u003c\/p\u003e\n\u003cp\u003eThe climate is a huge factor in distinguishing specialty coffee status. Arabica coffee trees prefer moderate year-round temperatures of around 64-72 degrees Fahrenheit (18-22 degree Celsius). In order to achieve this, the farm needs to be grown in what is referred to as the coffee belt (the area between the Tropic of Cancer and the Tropic of Capricorn). This region is ideal so as to not have too cold of temperatures. Additionally, the coffee trees need higher altitudes to moderate temperatures from being too hot. The closer the tree is to the equator the higher the elevation is required to achieve these moderate temperatures. \u003c\/p\u003e\n\u003cp\u003eTemperatures consistently too warm can speed up ripening and reduce cup quality, while temperatures too cold can stress or damage the tree. Stable daytime warmth with cooler nights is ideal, as that temperature variation helps preserve acidity and enhance flavor development. Within this range, cherries mature slowly and evenly, allowing sugars and organic acids to fully develop, which are key factors behind the sweetness, brightness, and complexity prized in specialty coffee.\u003c\/p\u003e\n\u003cp\u003eThe southern part of Minas Gerais, Brazil, where our beans are sourced, is located on the edge of the coffee belt near the Topic of Capricorn and our sourced farm sits about 1,000 meters in elevation, allowing for excellent year-round temperatures. \u003c\/p\u003e\n\u003cp\u003eThis results in cleaner, more complex, and distinctive flavor profiles.
